Dry-Hopped Kölsh Style Ale
Originating in Köln, Germany, the Kölsch is a light- to medium-bodied golden ale with a distinctly grape-y flavor to the malt. A medium level of hopping adds to the bright, refreshing nature of the brew. It was an obscure beer style before American craft brewers grabbed onto it. However, since then, it has caught our brewing imagination, becoming a staple of the craft beer scene. Many breweries do straight, legit, representations of the style, but some like to mix it up — some like Settle Down Brewing Company from Falls Church, VA.
Settle Down Easy brews their Kölsch with a healthy dose of Tetnanger and Hersbrucker hops, dialing up their beer’s crispness to near-Pilsner levels. They then dry-hop the brew with the same hops, increasing its aroma. Though this is more hop play than you usually see with Kölsches, don’t let us make you think that Settle Down Easy’s No. 1 is a “hoppy beer.” It is a smooth drinking experience that cuts through late summer humidity, and its low ABV (4.75%) treats you nicely the next morning.

American Porter Brewed with Maple Syrup
North Carolina’s Crystal Coast Brewing Company crafts this light-bodied American Porter out of Pale Malts, flaked oats, and tossed oats. They also throw in “a healthy addition” of maple syrup (and a touch of vanilla). Here’s the thing, though, the resultant Porter remains dry. So you get maple flavor without maple sweetness. Now, maple flavor without maple sweetness turns out to be surprisingly tangy, so much so, that it’s probably best to think of this beer as a sour porter.
