Hard Apple Cider Made from Foraged Apples
All the way over in Highland County, an apple’s throw from West Virginia, is the small town of Monterey and Big Fish Cider Company. Big Fish makes lovely off-dry and semi-dry ciders from apples they grow in their orchards. However, for their Wild Meadow cider, they’ve gone a different route. We’ll let them tell you about it …
“Wild Meadow is one of the most traditional ciders made at Big Fish Cider, Co. because we actually forage for wild apples in the fields and forest edges of Highland County. These are apples from trees that have grown up from seed, are higher in tannins and acidity, and typically have more depth and body than that of commercially grown apples. The cider goes through a slow, cold fermentation, which also helps to retain those fruity esters and tannins. While fruity, it is not a sweet cider. You’ll find that it pairs well with pork dishes and cheese, particularly blue or sharp cheese.” — Big Fish Cider Co.
“More depth and body” is right. The Wild Meadow boasts a surprisingly rich apple taste. In fact, the fruit is so strong that you expect it be a sweet cider, which (just as Big Fish says) it is not. We suggest drinking the Wild Meadow just a little cool as the warmer temperature allows the acidity to mellow out a bit.
We’ve been fans of Big Fish ciders for awhile, and we didn’t think we’d find a cider of theirs that we liked more than their Highland Scrumpy (which we also have <— shameless plug) … we were wrong.
