Tox Brewing Company

One day, close to Thanksgiving in 2015, in New London, CT (just across the sound, north of the eastern end of Long Island), two lifelong friends were home brewing with a more experienced brew buddy/bandmate when they found themselves thinking this way … They hadn’t been playing out a lot recently. In fact, they had been brewing more than gigging. They liked gigging, but they liked brewing too. Since leaning into gigging wasn’t working out so much, what about leaning into brewing? Oh. Did we mention that one of these friends was a professor of Toxicology at the University of St. Joseph, who brought his interest in the role of toxicology in nature to brewing? We didn’t? Sorry about that. Anyway, in 2018, Tox Brewing Company was born.

New England Style IPA

The Fugu, named after a Chinese pufferfish that can be poisonous if not prepared correctly, is a New England Style IPA that is not poisonous no matter how you prepare it. Tox has prepared it with the decidedly non-toxic Citra, Cashmere, and El Dorado hops. Both hazy and juicy, the Fugu is creamy in the mouth with a juiciness reminiscent of mandarin oranges and pineapple.

Double New England Style IPA

So, Tox has an NEIPA called the Foxglove, named after the poisonous flower. (Are you starting to see a pattern of ironic naming here?) (Wait … is it ironic? No. No, it’s just wryly countering expectations.) This brew is the double version of that one. Both feature New Zealand hops (Nelson Sauvin) and American hops (Citra).

Smooth on the mouth, the Digitox delivers a lovely juiciness of melon, berries, or even grape notes with just a twinge of citrus on the finish.
