Since 1844, Brasserie Dupont has been brewing at their farm-brewery in the winter. Leaving the beer unfiltered and letting it undergo a secondary fermentation in barrels, they then wait and serve the beer in the summer to their seasonal laborers or “saisoniers.” With the same thing going on in other Belgian farms, over a century and a half Saison Dupont has risen above other such brews to become the classic example of an idiosyncratic style.
