The vineyards of Domaine Carpy are located at the traditional border of Languedoc and Roussillon among pine and almond trees, wild asparagus and peaches. Though Grenache dominates the plantings, the estate also contains the Carignan, Syrah, and Mourvedre that make up the rest of this blend. Fitou, the oldest appellation in the Languedoc, was a favorite drink of Philip Augustus (first king of “France”), Louis XIII, Louis XIV, and Rabelais. The grapes are also beloved by the wild boar who roam the hills of Fitou, so it’s no surprise that the wine was once known as the perfect accompaniment to boar saucisson. Bears are also a frequent vineyard pest. With all of these Fitou endorsements both noble and wild, can you afford to miss this wine?!
