Unfiltered Belgian Pilsner

You may be surprised to learn that not everyone in Belgium ends their day behind a mouth-puckering barrel-aged sour ale or knocks on the doors of some abbey at all hours to get their brews. (Although, if you could, why wouldn’t you? But to each, their own.) No, sometimes they go for the simpler pleasures. And, of course, Belgian brewers are influenced by the beer drinking trends all around them. All this is to say that the Belgian Pilsner is a thing … and if there is a Belgian beer thing, then it’s fair game for Brewery Ommegang.

Brewery Ommegang in Cooperstown, NY is one of the premier American breweries dedicated to Belgian style beers and Belgian inspired beers. In fact, Ommegang is so legit, that Belgian brewing conglomerate Duvel Moortgat began investing in it in the 90s, eventually buying them outright in 2003.

Well, at the beginning of this year, after years of award-winning ales, Brewery Ommegang released its first lager — the Idyll Days Pilsner. For this brew, they start with heirloom malts that boast higher protein levels than other malts. (These higher levels give the Pilsner a rich, foamy head.) Ommegang brewers use the older method of floor-malting to bring out the barley’s biscuity flavors with just hints of honey. They then bitter things with grassy and spicy classic Czech Saaz hops. The result is a Pilsner that is, as Ommegang calls it, “glorious in its simplicity” but “hardly simple to make.”

Fortunately, we don’t have to make it. We just get to appreciate that it’s simply wonderful.
