Why a sparkling Wine of the Week?
The advent of Fall would normally mean school gatherings, gallery openings, festivals, and many other excuses to enjoy a bit of bubbly. Those aren’t happening this year, but that doesn’t mean you should lose the opportunity to tickle your nose and delight your palate with some finely crafted Cava.
Oriol Rossell is a family business that has been dedicated to growing grapes and making wine since the 17th century in the town of Sant Marçal, south-west of Barcelona. The grapes come from vineyards located between the mountains of the north and the coastal mountains to the east, one kilometer inland from the Mediterranean. This results in an unusual micro-climate that seems almost designed to produce magnificent sparkling wines. The vineyards are certified Organic. All the grapes are hand-picked and then carefully sorted again at the winery. The wine is made in exactly the same way as Champagne, even settling the sediment in traditional riddling racks, whereas almost all Cava houses use the much faster “Gyropallette,” a machine that settles bottles in bulk much more violently.
The Oriol Rossell Brut Nature is served in 20 different Michelin-starred restaurants in Spain and is known as the Cava house that beat Dom Perignon in a blind-tasting competition. This wine is an extraordinary value and, in these increasingly heavy times, may provide a moment of much-needed lightness.
