Spotlight on Jackie O’s Solt

Sour Wheat Ale with Coriander and Sea Salt
In Athens, Ohio, Art Oestrike and Brad Clark founded Jackie O’s Brewing Company (named after Art’s mother) in 2005. When they expanded in 2013, they purchased a building and added a room specifically for sours, which was ready for brewing in 2017. We’ve had a few of Jackie O’s beers, but the Solt is our introduction to their sour brewing, and … we’re hooked.
The Solt is a mixed fermentation sour wheat ale. J-O’s ferments Two-Row barley and malted white wheat with a weizen and a Brettanomyces yeast. They then bitter the concoction with Czech Saaz hops, adding in coriander and sea salt. Finally, the brew spends two months in stainless steel tanks, mixed with Jackie O’s Lactobacillus cultures.
We’ve long held that Brett gives you a rounder sour than Lactobacillus, and we think the Solt supports this claim. It has a smooth, almost creamy sourness at its core caressed by a Lacto tang flirting round the edges with the sea salt. The Solt is like a Gose’s older, smarter, more sophisticated sibling … who has an ambiguously influential job in her majesty’s government. (Where are our Holmes fans? Huh? Huh?)
