In time for Women’s History Month, Washington D.C.’s ANXO Cider releases their annual collaboration with Eden Specialty Ciders from Newport, VT, the Nevertheless.

Eden pulls together apples from various orchards to make the mix for this cider, this year sourcing apples from orchards in Pennsylvania and Vermont. The exciting thing about this cider, though, is that ANXO and Eden only use native yeasts to ferment it.

Rather than use a commercial yeast, they allow the apples to ferment with whatever yeasts are residing on the apples’ skins. This practice allows for multiple yeast strains to contribute to this cider. Those strains gift the cider with a hint of earthiness and an untamed, unruly, but beautiful character.

While dry, the Nevertheless avoids the sharp tartness that dry ciders can sport. Its wild notes exist in a beguiling harmony, finally teasing you with with an appealing aftertaste that’s somewhere between unsweetened vanilla and two steps shy of ginger. On top of giving us this cider that’s really interesting while remaining crisp and refreshing, ANXO and Eden are donating a portion of the proceeds from the Nevertheless to Women’s Health initiatives.
