Patois Cider is a couple of dreamboats (Patrick Collins and Danielle LeCompte) making dreamy Virginia cider from various orchard terrains, gleaned and otherwise. The ciders are fermented with ambient yeast and minimal sulphur and every year they are delicious and reflective of the vintage and the terroir. Parallel Voicing is a co-ferment of apples (Wickson, Ashmead’s Kernel, Harrison, Gold Rush, Seedling from Morris Orchard in Monroe VA) and Vidal Blanc (Bluestone Vineyard in Bridgewater, VA) and the juices were blended to finish fermentation in bottle. Parallel Voicing 21 saw six months in bottle on lees and has zero sulphur added. It has lovely tropical fruits this vintage and you should treat yourself and take a bottle home.

Bluestone Vineyard is a family run winery in the Shenandoah valley that takes its name from the bluestone (a type of limestone) found in the soil of their vineyard sites. Odd Bird is another instance of winemakers making the very best of the difficult 2020 vintage. Instead of the robust Bordeaux blend that most of the grapes were intended to make, Lee Hartman has fermented them away from their skins to make this substantial but balanced white wine for warm weather meals.
