Isabelle Coustal and her husband Laurent established Sainte Eulalie in 1996 on the best vineyard sites of the Minervois AOC. The vineyards are now on average 25 years old, all farmed organically, and Coustal is making some of the region’s finest wines. The “Printemps” (Spring) Rosé is no exception. A blend of 50% Syrah, 35% Cinsault, 10% Grenache (from 70 year-old vines!), and 5% Mourvèdre, hand-sorted, produced by “saignée”, and aged in tank. This is a long-time shop favorite, and we highly recommend you stack the pantry while it is on sale. There are many hot days yet to come and you won’t be sorry to have a chilled glass of this lovely rosé to cool off with!
