Unfiltered Continually-Hopped IPA
From Milton to Boston, it’s a Delaware-Massachusetts collaboration! Dogfish Head and Trillium Brewing Companies have each brought their own expertise to this hazy IPA’s table.
Trillium starts off with its affinity for juicy, hazy IPAs by assembling one with malted wheat to make the brew extra pillowy. Of course, things don’t stay that way as malted rye undercuts the juiciness with spiciness. (We wonder if the rye wasn’t a Dogfish Head suggestion, as it would be just like them to kick the juice down a notch.)
Next, it’s time for hopping, and that’s when Dogfish Head rolls up its sleeves and gets down to bitterness. Selecting a collection of Pacific Northwest hops, the people who bring you the 60 Minute and 90 Minute IPAs continually hop Trillium’s malt bill for an unspecified amount of time. This signature Dogfish Head procedure delivers a full hop flavor that’s laced throughout each sip.
Dogfish Head is close-lipped about which hops they use, but they don’t seem to have gone full West Coast citrus/pine because the resultant beer still serves up hints of dry pineapple and/or mango. East meets West, hazy meets hop, Head meets Trill — what a thrill! The Tru-Action succeeds as a tasty bridge between IPA worlds.

Irish Extra Stout Style Stout
Pretty soon, we’re going to have to acknowledge Virginia’s own sub-category of craft brewers — proud, vocal military veterans.
Based in the northwestern edge of Fredericksburg, 6 Bears & a Goat Brewing Company was founded by former members of the U.S. Navy and the Coast Guard. They’ve set an age-old rivalry aside to make some good beer. We’ll let them explain the name of their Irish Extra Stout style stout …
“O'Dark Thirty designates an unspecified time that occurs sometime after midnight but well before sunrise … and is often associated with dangerous yet exciting military maneuvers and operations. No matter what the exact time is, it is always dark. Very dark. That’s a perfect description of our Irish Extra Stout.” - 6b&ag
Our ursine-caprine vets may not be Irish, but they peg this style! The O’Dark Thirty is dry and creamy with a prominent roast from the malt. The flavor is full with dark chocolate and coffee notes, but the body is light, and the whole beer is moderately balanced to make it easy to drink and easier to enjoy. If there’s only one stout to drink in the summer (and beyond), you should definitely consider the O’Dark Thirty to be that one.
