Foeder-Aged Czech-Style Pilsner
We like the beers from Brooklyn’s Wild East Brewing Company, and we’re not the only ones. After they opened in 2020, Hop Culture magazine listed Wild East among their “20 Most Underrated Breweries of 2020.” We’re pretty confident in our judgement, but it’s nice to feel validated every once in a while.
For the Subtle Reference, Wild East has collaborated (and not for the first time) with “blocks away” Brooklyn neighbor, Threes Brewing. Founded in 2014, Hop Culture has called Threes “one of the best breweries in the country.”
The Subtle Reference is a Czech-style Pilsner-style lager brewed with classic Saaz hops and triple decocted to get as much flavor out of those malts as possible. They then condition the beer for six weeks in oak foeders. We think it’s this oak conditioning that adds a slight roundness that’s uncommon for but not unwelcome in a Pilsner. Try this brew if you’re looking for a Pilsner with a, dare we say, subtle extra dimension.

New England Style IPA
We’re pleased to feature another ale from Brooklyn’s Grimm Artisanal Ales, the work of brewing and art by the husband and wife duo Joe Grimm and Lauren Carter Grimm. Joe, an indie musician, and Lauren, a sculptor, operated as a nomadic brewery for five years until settling into their own place in the East Williamsburg neighborhood of Brooklyn, in 2018.
The Whoosh is a New England Style IPA made with Simcoe, Citra, and Motueka hops. (Cute fact — Joe and Lauren named their cat “Simcoe.”) Light-bodied, the Whoosh sports a core of tropical fruit — pineapple and kiwi — all tightly wrapped in a sheath of citrus. It seems tailor made for the summer as it refreshingly cuts through the humid haze outside of the glass while remaining juicy and hazy within.
