How It’s Made:

Sustainably farmed sloped vineyards on the right bank of the Rhône along the Cèze River consistently produce ripe fruit for Foncalieu. They age this wine in stainless steel and concrete to preserve that ripe, freshness.

Why We Like It:

It’s bright and juicy without leaving the world of classic Rhône reds. The tannins walk along with the fruit notes like a good buddy rather than like a bodyguard.

White Wine of the Week

Chardonnay

100% Chardonnay (Rogue Valley AVA)

How It’s Made:

Oregon’s Foris Vineyards avoids malolactic fermentation here to keep their Chardonnay crisp. They ferment in oak to round out the flavor, BUT, since they don’t like oaky Chardonnays, it’s only 10% once filled French oak barrels. They then let their Chardonnay rest on its lees to increase texture and aroma.

Why We Like It:

It’s the Chardonnay with oak that isn’t an “oaky Chardonnay.” Balance is the key here, where you have that Rogue Valley sharp fruit slightly softened by the oak and its time on lees.

Midwest Side Story

Hazy West Coast Style IPA

How It’s Made:

This beer is a collaboration between Brooklyn’s KCBC and Minneapolis’ Modist Brewing. Leaving it hazy, they hop it with Centennial, Strata, Simcoe and High-Oil Cascade hops.

Why We Like It:

You get the pine and citrus notes you want from a West Coast-Style IPA, but the Strata gives it just a tinge of fruit. The whole thing drinks smoothly due to it being unfiltered.
