How It’s Made:

Oregon’s Foris Vineyards avoids malolactic fermentation here to keep their Chardonnay crisp. They ferment in oak to round out the flavor, BUT, since they don’t like oaky Chardonnays, it’s only 10% once filled French oak barrels. They then let their Chardonnay rest on its lees to increase texture and aroma.

Why We Like It:

It’s the Chardonnay with oak that isn’t an “oaky Chardonnay.” Balance is the key here, where you have that Rogue Valley sharp fruit slightly softened by the oak and its time on lees.

Domaine Manoir du Carra
Beaujolais Nouveau

100% Gamay (Beaujolais AOC)

How It’s Made:

Manoir du Carra ferments their Gamay grapes for this Nouveau for just four to six days before pressing them. They then mix the pressed juice with the free run juice and allow the combination to undergo malolactic fermentation. It’s then into the bottle and off to the waiting world.

Why We Like It:

It’s got the fresh, light, juiciness you look for in a Beaujolais Nouveau without sacrificing that touch of refinement. Plus, it’s a great value for a Nouveau of this quality.

How It’s Made:

Chicago’s Dovetail’s Baltic-Style Porter is a Lager, the way Baltic Porters should be.

Why We Like It:

Instead of the hint of sourness that Baltic Porters are known for, there’s just a hint of dark fruit in the background, which we don’t mind at all. In fact, this beer grows on us more and more as we drink it.
