Spain’s Rueda wine region sits in the north central part of the country, in the autonomous state of Castilla y León. Filled with 300 medieval castles, it’s a dry, rocky region with hot days and cool nights. Around the Duero River, which runs the length of the region, the soil becomes dark brown and alluvial. Most of the vineyards are south of the Duero, which is where you’ll find Bodegas Garciarévalo.

Jose Antonio Arévalo and Benicio Garcia (Garcia + Arévalo) founded the winery in 1991 in Matapozuelos. Even though all of Rueda is known for its native white grape, Verdejo, the area around Matapozuelos is particularly known. Their soil is sandy and poor quality like most of the region, causing their vines to produce small grapes with more concentrated flavor. Made with organic grapes from their Tres Olmos (“Three Elms”) vineyard, the crushed Verdejo sits throughout the winter on its lees, gaining character. What comes out is a fresh tasting white boasting a quietly intense fruit. The underlying acid conspires with said fruit to simulate notes of vanilla around its edges.

Try this wine with a dish that plays with caramelized onions and capers or, alternately, with white pizza. In either case, the Tresolmos is a white that can get you through spring and take you right into summer.
