How It’s Made:
Baglio di Pianetto organically grows these grapes in southern facing vineyards just south of Palermo, sitting just under 2,000 feet above sea level. After two different pickings (one earlier and one later), Baglio di Pianetto has the grapes undergo cryomaceration before fermenting them in stainless steel. They then age the wine in oak for five months followed by an additional one month further in the bottle.
Why We Like It:
First off, don’t dive into the Timeo immediately. After opening it, let it breath for a few minutes. After some air, what we get is a balance between that deep grillo citrus fruit and the zippy acid woven together.

60% Syrah, 25% Carignan, 15% Grenache (Languedoc AOC)
How It’s Made:
The Boutin family believes in making wines with minimal intervention to bring out the nature of Aspères, their part of Languedoc, between Montpellier and Nîmes. For this red, they organically grow grapes from vines planted between 1961 and 2005. They ferment them for three weeks (two weeks on skins) and then age the wine in barrels and stainless steel tanks for 18 months.
Why We Like It:
Balance is the key here. Yummy blackberry notes bounce against tart, spicy tannins.

How It’s Made:
Basic City double dry-hops this IPA and then leaves it unfiltered after having hopped it with West Coast superstars Cascade, Citra, and your favorite hop blend, Falconer’s Flight.
Why We Like It:
This is a stunning IPA from Basic City as it features a fun and vibrant hop flavor! Drink it cold but not ice cold, to really get into the hop flavor cavalcade.
