The store is filled with Champagne and sparkling wines from all over the world at the moment, but we’d like bring back an old friend of the shop as our final wine of the week; one of the greatest hidden treasures of the sparkling world.  This is a certified Biodynamic, practicing Organic, Methode Traditionelle (what we used to call “Champagne Method”) sparkler made on the northern banks of the Loire.

Vincent Girault, owner and winemaker since 1978, hand harvests Chenin Blanc, Chardonnay, and Cabernet Franc(!), gently presses the fruit, and uses only the best for this unusual and particularly delicious blend.

Only native yeasts are used for the temperature-controlled fermentation.

Aged for at least two years before bottling.  Grab a couple to have in the fridge for last minute parties or guests!
